Banana Muffins Recipe

Hey! So I’ll be honest, I’m a pretty terrible chef, but I think these turned out really well! They tasted really great, and I think they would be really good with chocolate or nuts added to the batter. Let me know if you try them out!

INGREDIENTS

  • ⅓ cup melted coconut oil
  • ½ cup agave
  • 2 eggs, preferably at room temperature
  • 1 cup packed mashed ripe bananas (about 3 bananas)
  • ¼ cup almond milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 ¾ cup white whole wheat flour
  • ⅓ cup old-fashioned oats, plus more for sprinkling on top

 

INSTRUCTIONS

  1. Preheat oven to 325 degrees
  2. Beat coconut oil and agave together
  3. Beat in eggs
  4. Mix in mashed bananas and milk
  5. Add in baking soda, vanilla extract, salt, and cinnamon
  6. Mix well
  7. Place muffin tin liners in a muffin pan, and evenly spread the batter into each one (about halfway full)
  8. Sprinkle oats and raw sugar on top of the batter
  9. Bake for 25 minutes
